Method

  • 100g Dark Brown Sugar
  • 50g Caster Sugar
  • 1 Large Egg (Room Temperature)
  • 180g Plain Flour
  • 1/2 tsp Baking Soda & 1/2 tsp Salt
  • 150g Dark Chocolate (Roughly chopped)

Method

  1. Cream the softened infused butter, brown sugar, and caster sugar in a stand mixer on medium speed until light and fluffy (approx. 3 minutes).
  2. Add the egg and mix until fully emulsified. Scrape down the sides of the bowl.
  3. Sift in the flour, baking soda, and salt. Mix on the lowest speed until just combined. Fold in the dark chocolate chunks.
  4. Portion the dough into 12 equal spheres using a digital scale for exact dose consistency. Cover and chill in the fridge for a minimum of 2 hours.
  5. Preheat oven to 165°C (330°F). Space the chilled dough evenly on a lined baking sheet.

Ingredients

  • 120ml Cold Water or Fruit Juice (Clear)
  • 85g Flavored Gelatin Dessert Mix (e.g., Jell-O)
  • 20g Unflavored Gelatin Powder (approx. 2 sachets)

Method

  1. In a small bowl, whisk the infused MCT oil and sunflower lecithin vigorously until completely integrated. Set aside.
  2. In a heavy-bottomed saucepan, whisk together the cold water/juice, flavored gelatin, and unflavored gelatin. Let it sit off the heat for 5 minutes to "bloom" (hydrate the gelatin).
  3. Place the saucepan over medium-low heat. Whisk continuously until the gelatin is completely dissolved and the mixture begins to simmer (do not let it achieve a hard boil).
  4. Remove from heat. Immediately pour in the oil/lecithin mixture. Whisk aggressively for 2-3 minutes to force the emulsion. The liquid should become opaque and uniform.
  5. Working quickly, use a culinary dropper to fill the silicone molds.
  6. Place molds in the refrigerator for 2 hours to set firm. Unmold and store in an airtight container.
